Hmm, you mean like the Iron Chef school of themed cook-offs?
Offhand I'd guess it's similar to what happened to channels like TLC & History. They discovered that by adding more shock, drama, and drifting from pure fact, they reeled in more viewers over time.
I'm old enough to remember the Julia Child-era of cooking shows, which was just straight cooking technique in which the chef was relatively interesting if you were in to cooking, but not memorable if you were neutral. Later chefs like Wilson and Emeril LaGasse were clear personality upgrades that could catch more neutrals. And so it goes...

These remind me of the PBS cooking show conducted by the late, hilarious Justin Wilson of Louisiana.
He would use these terms all the time, then add in whatever the hell he was feeling at the time. Plus a couple splashes of wine for good measure, meanwhile sampling the bottle as he cooked. :D
