Because instead of a massive set of binary blobs, you have a small set of simple tools with easy to implement specifications. That result in everything you need.
A bit sad that Turing's machine isn't mentioned anywhere in their pages – but maybe I just missed the mention.
Genuinely, this is brilliant. If this works, it'll mean that the massive chunk of our culture that lives on the internet won't be lost completely. I wish them luck.
