Docker-compose and a terminal is how I do it. Its simple and effective. I'm able to manage ~20 services that way.
Moved to Jellyfin last year after Plex started making some questionable moves. Only feature I miss is the intro skip.

This is just importing a list of extensions from chrome and matching them to a Firefox extension. If the extension doesn't have a Firefox version it won't fo anything.

I'm a NixOS convert too. I actually still run everything in docker but the idea of not having to remeber or document how I set everything up was too appealing....a year later and my desktop and laptop are now on nix too
