You still need to enable third-party repositories like RPMFusion on Fedora for a lot of packages, which may annoy the average beginner. Immutability is really not an issue for most use cases, and if it is then Nobara also exists.

No outdated package is the fault of the package manager. The software in Mint's (and also Debian's) apt repositories are just old because they are long-term support distros.
Last time I used Mint, the ffmpeg version was so disgustingly old that I couldn't play YouTube videos I had downloaded. I understand why it's recommended to beginners so much, but I think that something like Bazzite which has much newer software in its repos is much better if one wants everything to just work.

Kerbal Space Program is pretty great for getting to understand a rather simplified version of orbital mechanics and aerodynamics (no n-body physics unless you install Principia and no realistic aerodynamics unless you install FAR). Just don't buy KSP 2.
For mods, you should use CKAN to get them. The comments in this Reddit thread have some good recommendations. You can also play with the RP-1 modpack + Principia if you want an ultra realistic experience:

Edit: You should only use Principia with the Real Solar System mod (which is included in RP-1) because n-body physics breaks the game with KSP's vanilla star system.

LibreTube -> PipePipe (has some nice features like live chat, and less buggy in my experience)
LibreOffice -> OnlyOffice (has better Microsoft Office compatibility, and easier to use in my experience)
Disable your third-party DNS, that only works to make you more identifiable as you're already using a VPN. You can also use Syncthing to sync your password vault etc. between your devices. I'd also recommend using Posteo instead of Tuta because it is cheaper and its privacy policy is kinda better.
