Cheese of the day: CréMonté
Paladin CréMonté is a German blue cheese encased in a white mould. It has a pleasant smooth texture with a special creaminess, even though it contains only 34% fat.

A friend of mine hates cheese (I know, none of us understand it), and she got a job in Switzerland. She worked remotely, but every time she had to go there for company gatherings and such she had to endure endless amounts of fondue and raclette 😆
Ha. Same comment. Your cheese love is strong.

Might try something like that with the sourdough I usually use. Got a nice big cast iron pan already.
Sourdough that I have been making lately: add flour to bowl and pour in some boiling water. Mix and allow to cool, shouldn't be so much water that it forms a dough yet. Once cool, add sourdough starter and enough water to form dough. Then leave for a few hours or all day to rise and then bake.
The hot water reacts with the starches to gelatinise which cold water doesn't. Results in softer bread, I think it works by holding moisture better.
Interesting, will try.
Cheesecake is the one and only thing I make for events that I’m not hosting. The variety and form changes (muffin form are popular with the people I know now, not big on sweets), but its one thing I’m very good at doing to the point people look forward to it. I’m prettt sure several invites over the years have been just for that.
Because my recipe is ultra-simple minimalist base recipe designed to be slightly modified to account for different toppings, and it wasn’t written within the last 100 years (passed down several generations, though it did have to be modified somewhat ages back for modern products), and that just makes it better. Modern cheesecake recipes are crap and have too much shit in them. Flour in the filling?? Are you insane??? Talk about a ruined texture!
OP you are a lifesaver. I definitely have to get the Thanksgiving Libation in the infuser soon (it's just a cranberry orange infused vodka) and this thread reminded me I had a pear one I had to take out. I'll probably also bring a bacon brussel sprouts and maybe a roasted root vegetable this year, but I won't know until we get closer to the holiday.
I gotchu, glad to help
How much time do I have to prepare, what season is it, and who is doing desserts? I cannot stress how much these matter.
You have about a month to answer the first two questions, and Janet wanted to bring desserts.
Fuck me, she's going to do one of those"homemade" canned pies again...
Ok a month puts us at peak Thanksgiving with time to spare, I'm going to be bringing Pumpernickel Rye stuffing, one 9x9 for the old fashioned and a basket of stuffins for everyone else. A gallon of burbon mulled cider for the grown ups, and I'll have the spouse whip up her homemade whipped cream.
Cool whip died in the 70's Janet, quit pretending it's edible!
If it's for thanksgiving, I'm bringing butter basted butternut squash, one in garlic sage and the other in maple burbon. If it's particularly cold out, I'll bring a sachette for ponche vino.
If it's any time you're making macarons, I'll be frying up wonton pizza rolls. They're the opposite of fancy but they meet macarons in the whimsical department and I'm all about that whimsy.
Bro is trying to get uninvited
Bro is getting an invite in the mail and a backup invite via text
BBQ Pulled Pork Sliders
Throw a pork shoulder in a slow cooker with a can of coke and seasoning. Let cook on low for 8 hours.
Shred the pork (it should be easy to pull apart). Add bbq sauce. Bring rolls and coleslaw to make the sandwiches.
It’s always a hit, feeds a ton of people, and it’s the easiest recipe I keep around.
Three dozen lamb Kibbeh balls. Made with lamb and onions from my farm. My great grandmother's recipe.
Is this the buckwheat meal wrapped meatballs?
I lived in Toronto for a while and a schwarma place had kebe meatballs. I wish for a real middle eastern restaurant to open in my small town but I fear people will be unhappy about it opening because there is a lady in town that already has a donair place that isn't great but she is from this town and people might back her over a new person in town.
Kinda, I do them where everything is incorporated. Instead of it being wrapped in bulgar wheat is more like a meatloaf thats then portioned into balls and shallow fried in a pan. So more of what you'd consider a meatball less of a pocket type thing. Served with a yogurt sauce and a hot sauce.
Sounds delicious.
Would definitely be clearing that plate at a potluck.
A large trench coat and two other people so we can sneak in and seize the food for ourselves.
Smoked bacon jalapeño poppers. Stuffed with cream cheese cilantro and lime juice
300F for ~1hr. Just whenever they get the color you're looking for.
I would eat soap if it tasted like cilantro
Microwave chocolate chips until soft (try stirring them after about a minute in the microwave, they sometimes keep their shape despite being melted.)
Add smooth peanut butter to your taste, microwave again for another 30 to 60 seconds, stir to combine, pour in chex mix, gently stir to coat the cereal
grab a gallon size ziplock, add excessive powdered sugar to ziplock (the extra will fall off the cereal into the bottom of the bowl), add chocolate peanut butter coated cereal to the ziplock, seal ziplock and shake the snot out of it,
Pour into your potluck bowl or take the bag as is.
Muddy Buddies I believe is Chex getting in on the popularity of puppy chow. Puppy chow was really popular when I was in middle school and the official version started appearing when I got to high school I think.
But home made has always been and always will be better!
Dill pickle pasta salad.
Shit’s like crack.
I read this and immediately felt my salivary glands activate.
Tortilla chips and guacamole. Guacamole is the thing I'm most confident in making and my mom taught me how. Also margaritas because she taught me that too.
Ambrosia. No one else eats it so I get it all to myself, and I never have to ask for the bowl back.
I do not care if it's unappreciated and/or unwanted, but there's no way I am not bringing either my homemade mac n cheese or homemade tuna noodle casserole. Preferably option 2.
Pot, if you're lucky 🤷🏻
Brunswick stew. But with "normal" meat instead of rabbit (as is traditional) because some people are weird about eating rabbits for some reason.
Why tell em?
With any luck I will supply the pot.
After all the secret to good food is
Get em stoned and make em wait!
Really depends upon what I know about the people who will be eating and the what types of things I know people are already brining. Maybe chili and cornbread, but that may not fly with, for instance, a number of my older in-laws.
Cookies is another one that is more safe, though I also turn the sweetness on those down for Japanese audiences.
Duck fat roasted potatoes or ham rolls
Question: where do you get duck fat? Or do you just cook a lot of ducks on the reg
In the US, I've seen it next to the olive oil, various vegetable oils, etc. at the grocery store. You might also find beef tallow, lard, and/or commercially prepared bacon grease in the same area.
I've seen it in the fancy grocery store but it only takes roasting one duck to get a jar full of duck fat. And you will enjoy eating the duck! But you will also have had enough of the scent of duck fat that you'll be happy to leave it in the fridge or freezer for awhile.
African ground nut stew. It is a basic chicken stew with peanut butter and hot sauce added at the end to make it creamy and spicy.
I was recently at a potluck where they had these trader joes cornbread chips, and I've been craving them since. 100% bringing those with some chili.
Depends on the audience and my mood.
I often times bring an opo squash indian vegetable dish and kitchari (basically, rice and beans) because they are generally able to fit with most people's dietary restrictions and also kinda unknown to people because they aren't the sort of Indian food a restaurant is going to have. Doubly so if I know a vegetarian's coming.
Sometimes I'll bring my chocolate chip cookies. Secret recipe, not the one on the Tollhouse chocolate chip wrapper.
Bucatini alla pizzaiola is a good Italian dish.
I've not had the motivation lately, but sometimes people would get surprised with some sort of improvised, from-scratch Euro-style sponge cake based on whatever's in season with pasty cream and stuff in it. Or some sort of sweet roll.
That choice always depends on the people coming to the potluck. Some people just don’t plan them well and everyone brings 800 sides. So I always read the room and go based off that I think no one else will bring.
So many salads...
Cranberry cobbler
Cup and a half of cranberries (fresh or partially frozen is fine too)
Half cup milk 3%
Half a cup melted unsalted butter
One cup flour
One cup sugar
Heaping teaspoon baking powder
Half teaspoon salt
Large egg
3 bowls, 1 of which is large
Cast iron skillet 10 inch
Use some of the butter to grease up the cast iron skillet all around.
Bowl. Toss cranberries with some of the sugar ( 2-3 tablespoons )
Large bowl. Salt, flour, baking powder, reminder of the sugar in the other bowl. Whisk.
Third bowl. Milk. Egg. Whisk together. Add remainder of butter. Whisk some more. Pour mixture into the large bowl with the dry ingredients. Whisk till combined.
Pour mixture from large bowl into buttered up skillet, sprinkle sugared cranberries all around on top.
Bake in oven at 350F-375F (oven dependent) for 30ish till springy. Let sit for a bit after taking out of the oven.
Takes about 15 minutes to prep, vanishes in about roughly the same time too.
I eyeball the measurements for the most part, feel free to adjust the sugar levels based on your preference, though I’d advise not cutting it out entirely.
Pickle roll ups - get a full size pickle and wrap it with Buddig corned beef on the outside and cream cheese on the inside. Then slice it and they're cute and tasty 💜
Smoked haddock kedgeree. Easy to put in the oven quickly if its cooled down a bit and its something likely to be unique.
Roast potatoes, cheap and easy to make large quantities for and they can still be good cool.
Key lime bars, haven’t quite perfected baklava yet
A Nokia 300 Charge.
Creamy potato salad!
Beer cheese and bratwurst dip.
And celiacs thank you, because that's sometimes the only thing at a potluck that we can eat.
If it’s something I have to make, probably some Asian noodles. Can make a big batch at once since I have a wok, and I can just toss in whatever combination of veggies with chicken. If it’s something store bought, probably ice cream.
Mexican Insanity Chili.
Tortellini Pasta Salad - Cook tortellini, chill, mix with roasted red pepper, kalamata olives, creamy Italian dressing, basil, parmesan cheese flakes, onion (if you like). Serve cold.
People like you are the hero of every potluck I go to.
wine or store bought dessert.
Probably some kind of beans and rice with onions and herbs and a little bacon thrown in. I'm lazy.
If I wanted to impress, a tray of homemade lasagna that'll make your toes curl.
Depends on the time of year. In summer I might do a watermelon salad with tomatoes, cucumber, feta. In winter more likely a made-from-scratch mac and cheese with chorizo.
Tortellini chicken spinach soup! This one! https://www.365daysofcrockpot.com/...
Bacon jam. There's something magical when onions, maple syrup, and coffee mix up with little bits of bacon. It goes really well on top of a slice of toast and Muenster cheese.
Yep I'm doing the same. Aldi special
